AHCC is a functional mushroom extract made by fermenting the roots (mycelia) of shiitake mushrooms and then freeze-drying the result. What makes it different from regular mushroom supplements is that the fermentation process breaks down the beta-glucans into smaller, more easily absorbed alpha-glucan molecules. It was developed in Japan in the late 1980s and has been used extensively there as a complementary treatment alongside conventional medicine.

AHCC works by activating several key players in the immune system — particularly natural killer (NK) cells and dendritic cells, which are your body's frontline defenders against viruses and abnormal cells. It also raises levels of cytokines, the chemical messengers that help coordinate immune responses. This broad immune activation is why it shows up in research for everything from viral infections to supporting the body during chemotherapy.

A diet rich in colorful vegetables, fermented foods (miso, yogurt, kimchi), and zinc-containing foods (pumpkin seeds, legumes) also strengthens the immune foundation that AHCC works within. Avoiding excess sugar and ultra-processed foods is especially important, as high sugar intake suppresses the same NK cell activity that AHCC is used to support.
